Corn Sugar CS An adjunct used in Lagers in order to add gravity without affecting the flavor of beer. More common in cheap American Lagers.
Two Row Malt TR A standard malt used as a base in nearly all beer styles. Smoother and less grainy than six row malt.
Dextrine Malt DM Lightly colored malt which contains many sugar structures useful for increasing foam, sweetness, and body of a beer.
Wheat Malt WM Light colored wheat malt used in Hefeweizen and American Wheat style beers.
Munich Malt MM Malt that adds a slightly nutty but rich and malty character, along with a deep amber color.
Vienna Malt VieM Darker than Pale, but lighter than Munich malt. Used to add malt complexity and slightly toasted flavors.
Roasted Barley RB Barley that hasn't been malted and is instead roasted in order to create an almost coffe-esque flavor. Provides dark brown colors and roasted flavors.
Victory Malt VicM A tasty malt which is nuttier than Biscuit malt and adds an orange hue to your beer.
Biscuit Malt BM Barley which has been fired in a kiln in order to impart a toasty or biscuity flavor, along with increased body.
Caramel Medium Malt CMM This character malt is created by roasting still-wet sprouted Pale Malt and adds a rich caramel flavor and color to beer.
Crystal 40 Malt C40 Crystal Malts add roasted flavor and dark color to beers. They add sugars not easily converted by yeast to the batch, which allows sweetness to be left behind after fermentation. Crystal 40 is slightly roasted.
Black Patent Malt BP The darkest of roasted malts. Use lightly to add color, and moderately to add coffee-like roasted flavors.
Crystal 100 Malt C100 Crystal Malts add roasted flavor and dark color to beers. They add sugars not easily converted by yeast to the batch, which allows sweetness to be left behind after fermentation. Crystal 100 is moderately roasted.
Pale Malt PM A nice pale grain with a maltier flavor than Two Row, but equally versatile.
Chocolate Malt CM Darkly roasted malt imparts a nutty chocolate flavor and dark hue to beer, commonly used in Porters, Stouts, and Dark Lagers.
Smoked Malt SM Pale barley dried over a beechwood fire bed. Light in color, very smoky in flavor.
